Cilantro-Lime Rice

This delicious rice gives a great depth of flavor to burritos, taco bowls or Beef Barbacoa (see recipe). Use brown rice to add nutritional value. Serves 6.

INGREDIENTS

  • 1 cup brown jasmine rice

  •  ½ teaspoon kosher salt

  • 3 tablespoons fresh cilantro, finely chopped

  • 2 tablespoons organic butter

  • 1 tablespoon freshly squeezed lime juice

PREPARATION

  1. Rinse rice several times in cold water until water runs clear (this prevents mushiness). Drain well.

  2. Transfer rice to rice cooker (preferred method) or to a medium pot.

  3. Add salt and water to package instructions (most likely 1 ½ cups).

  4. If cooking in a pot on stove, cover and bring to a boil over high heat.

  5. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 18-21 minutes.

  6. Remove from heat. Let stand, covered and undisturbed for 10 minutes.

  7. Using a fork, fluff rice and then gently fold in cilantro, butter and lime juice.

  8. Enjoy warm.
