Instant Pot Turkey Breast

This is a seriously quick and easy way to make a turkey dinner that smells and tastes like you spent all day in the kitchen. The turkey breast is juicy, the gravy has depth, and best of all there are hardly any dishes to clean up since almost everything gets cooked in the Instant Pot!  For wine pairing: pair with a light bodied, yet nuanced Pinot Noir from Willamette Valley or Burgundy. Serves 6-8.  Enjoy!

INGREDIENTS

  • 4 pounds turkey breast, preferably fresh but works with thawed

  • 3 tablespoon EVOO (extra virgin olive oil), divided

  • 1 tablespoon smoked paprika

  • 1 teaspoon Herbs de Provence

  • 1 teaspoon sea salt

  • 1 teaspoon fresh ground pepper

  • 1 teaspoon garlic powder

  • 4 tablespoons organic butter, divided

  • 2 tablespoons all-purpose flour (use buckwheat for gluten-free)

  • 1 cup chicken stock

  • 2 tablespoons dry Sherry, such as Fino

PREPARATION

  1.  Mix dried spices including paprika, herbs de Provence, salt, pepper, garlic powder in a small bowl.

  2. Rub 1 tablespoon EVOO into turkey breast, then rub spice mixture into turkey.

  3. Turn Instant Pot to Sauté, and add 2 tablespoons of EVOO and 2 tablespoons of butter.

  4.  When butter is melted, sear turkey breast on all sides (takes about 5 to 8 minutes) then transfer to a large plate.

  5. Add sherry and ½ cup chicken stock to deglaze and scrape all bits off of bottom of pot.

  6.  Turn off Instant Pot and add wire rack (or silicon rack). Place turkey back in pot on top of rack.

  7. Close lid, set to sealing, and set Instant Pot to the Manual Setting for 25 minutes at High Pressure. Note do not use the poultry setting- must be high pressure..

  8. Once Instant Pot cycle is complete, allow to naturally release, which will take 10-15 minutes.

  9. Transfer turkey breast to a cutting board and cover tightly with aluminum foil

  10.  Meanwhile, remove the rack from the Instant pot and turn on to Sauté setting. Do not discard the turkey drippings. Add remaining ½ cup chicken stock.

  11. On a pan on the stove melt 2 tablespoons of butter. Whisk in the flour with the butter to create a roux, and cook for a couple minutes, whisking constantly, until golden. 

  12. Whisk roux into Instant Pot with drippings and stock to create gravy. Whisk until desired thickness is achieved and no lumps remain.

  13. Remove twine from turkey breast, slice and serve topped with gravy along with your favorite Thanksgiving sides.
