Maple Roasted Brussel Sprouts with Pepitas
Never thought that your family would not only eat, but love brussels sprouts? Irresistible fall flavors that are great for any holiday table. Serves 6-8 Enjoy!
2 pounds Brussels sprouts
2 tablespoons EVOO
½ teaspoon fine sea salt
½ teaspoon fresh ground black pepper
2 tablespoons fresh maple syrup
¼ cup raw green pepitas (pumpkin seeds)
Preheat oven to 400°F with rack in upper third of oven; line a large baking sheet with foil.
Trim stems from brussels sprouts and cut in half lengthwise.
Toss sprouts with oil, salt and pepper on baking sheet.
Roast, stirring once or twice until tender, about 25 minutes.
Drizzle with maple syrup and toss with pepitas.
Roast another 5 minutes until pepitas are just toasted and sprouts are crisp and browned.
