This is a simple and easy dressing, dip or sauce for gyros, veggies, Greek salads and sandwiches. Allow to chill at least 1 hour after preparation so that flavors can meld together. Enjoy!
2 (8 ounce) containers of plain Greek yogurt
2 hot house or English cucumbers, peeled, seeded and diced
2 tablespoons extra virgin olive oil
½ lemon, juiced
1 tablespoon chopped fresh dill
3 cloves garlic, peeled
Combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic in a food processor.
Process until well combined.
Transfer to a bowl, cover and refrigerate for at least on hour for best flavor.
